Salads without mayonnaise are perfect for potluck dinners, lunches, picnics, and holiday parties. Potluck meals are often set out on the table for a while, and you don't want to risk anyone getting sick from too-warm mayo salad.
I've read that commercially made mayonnaise can be left out of the refrigerator at room temperature for up to 8 hours, but I'm skeptic.
The Food and Drug Administration says that if the temperature is above 90 degrees Fahrenheit, you can only safely leave it out for one hour. So keep that in mind for Summertime potluck picnics.
