Avocado Salad Dressing
Hi. It's Lois with a new vinaigrette recipe that will make you feel satisfied, Avocado Salad Dressing. Inspired by Emeril's recipe, Don and I loved this dressing atop our South Beach Chef's Salad. It added just the right creaminess, punch and decadence to our lunch. Too bad we were on the South Beach Diet. Lunch would have been perfect with a glass of wine.
What You Need
For this recipe, you will need a food processor. A small one would work the best. An avocado peeler/slicer would be handy, and you'll need measuring cups and spoons. Whatever you buy, always buy the best you can afford. You want your kitchen tools to last a lifetime.
Avocado Salad Dressing Recipe

Ingredients
- 1 ripe avocado
- 1 teaspoon minced garlic
- ½ teaspoon salt
- 2 tablespoons lime juice
- 2 tablespoons water
- 1 tablespoon rice wine vinegar
- 3 drops Tabasco sauce more if you like it spicier
- 6 tablespoons olive oil
- ¼ cup fresh cilantro leaves chopped
Instructions
- Peel and seed the avocado. Put it in your small food processor.
- Add garlic, salt, lime juice, water, vinegar, Tabasco sauce and cilantro.
- Pulse process these ingredients until smooth.
- Add the vegetable oil and blend until emulsified.
- Serve immediately or refrigerate for up to 2 days.
