Summertime is terrific for grilling. A favorite combination is a grilled hamburger and a tasty Summer Squash Bake. With all the zucchini and yellow squash available now, it's the perfect time to make this squash.

We belong to a CSA (community sponsored agriculture) and get a weekly allotment of whatever is growing at the farm. The zucchini and yellow squash are abundant now. And that's okay with us. We love it, especially baked with onions and herbs on the grill. Sometimes we pair it with a delicious burger or some grilled eggplant. It's an easy supper for me. Don's the grillmaster. 🙂
When he's grilling, I'm the sous chef, which it not hard for this recipe. All you do is wash and slice the squash in rounds. Slice an onion in slivers, and cut a few fresh herbs. You can put whatever herbs you want in it, but I like Italian flavor, so this recipe calls for thyme, oregano, marjoram and salt and pepper. I added some orange zest to give it a little different flavor, and that was a great choice.
Add a side salad or an ear of fresh corn on the cob and you might not even want dessert. RIGHHHHT!
What You Need
You will need some heavy duty aluminum foil, a knife and a cutting board. And a grill, of course. But you knew that.
Summer Squash Bake Recipe
Ingredients
- 3 tablespoons olive oil
- 1 small red onion (sliced)
- 1 zucchini (sliced in rounds)
- 1 yellow squash (sliced in rounds)
- 2 cloves garlic (minced)
- 1 tablespoon fresh thyme
- 1 tablespoon fresh oregano
- 1 teaspoon dried marjoram
- ¼ teaspoon orange zest (The zest is the outside peel.)
- Salt & Pepper to taste (I use about ¼ teaspoon salt and ⅛ teaspoon pepper.)
Instructions
- On a large piece heavy-duty aluminum foil, pour 2 tablespoons of olive oil.
- Place the onions, zucchini, yellow squash on top of the oiled aluminum foil.
- Sprinkle the minced garlic, spices, orange zest, and salt and pepper over the squash.
- Pour the final tablespoon of olive oil over the top and seal the package.
- Bake the vegetable package on the hot grill for about 30 minutes, turning once.
