    Pimento Cheese Spread With Mayo And Cheddar Cheese

    Homemade pimento cheese spread is a classic Southern dish. It is best when made with freshly grated cheddar cheese, real mayonnaise, and diced pimentos. For this recipe, Kraft Mayonaisse is my go-to.

    Pimento Cheese, or as we called it when I grew up, "Pimento and Cheese," can be used to make sandwiches, as a dip for crackers or vegetables, or even, trending now, as a topping for burgers.

    My Mom loved her Pimento and Cheese. Sometimes she bought it premade from the grocery store but she also made it at home and this recipe is very similar to Mom's.

    I like to grate medium or sometimes sharp cheddar cheese for my spread. The pre-shredded packaged kind contains cellulose and the flavor is just not the same.

    I treated myself to a Kitchenaid Mixer last year and later bought an attachment for it. The attachment shreds cheese, veggies, and other things. It's awesome!

    Homemade Pimento Cheese Spread

    Pimento Cheese is easy to make even when shredding the cheese yourself and it's the perfect dish for parties, picnics, or holiday gatherings.  Spice it up any way you like. I add Tabasco sauce to mine and sometimes  Tony Chachere Cajun Seasoning or Seasoned Salt. 

    Ingredients

    • 2 cups shredded Cheddar Cheese freshly shredded is best
    • 1 small jar diced Centos Pimientos drained
    • ½ cup Kraft Mayonnaise
    • 8 drops of Tabasco Sauce

    Instructions

    • Mix all of the ingredients.
    • You can add more or less mayo to your liking.
    • Serve on bread as a sandwich, or use it as a dip with crackers or raw vegetables.

    Notes

     
    Note: I strongly suggest you shred your own cheese instead of buying prepackaged shredded cheese. The packaged cheese is coated with an anti-caking mixture to keep it from spoiling or clumping and it makes it dry.
