Roasted Spaghetti Squash with Citrus
I love spaghetti squash. Do you like it? I can eat it just like pasta, with sauce, pesto, or garlic butter. It's squash season right now, so you can easily pick some up at the farmers market or grocery store. This recipe is similar to a pasta salad. The dressing is light and the other vegetables and toasted almonds add crunch.
Food Pairings
Add some sliced fruit and a nice Green Salad. If you eat meat, Croatian Grilled Chicken is a nice addition to this meal.
A Squash Potluck
Before the pandemic Don and I used to go to a music festival called “Squashfest.” We aren't doing these kinds of events right now. Squashfest is held in the Shenandoah Valley of Virginia. Everyone attending is supposed to bring a squash dish to share with others attending the festival.
I brought this Roasted Spaghetti Squash with Citrus one year, and it got rave reviews. It is gluten free, dairy free and vegan. And delicious whether it is served warm, room temperature or cold.
Roasted Spaghetti Squash.
What You Need
You will need a good knife, cutting board, measuring cups and spoons, a small sauté pan (but buy a whole set of good pans!), a garlic mincer, and a bowl or casserole dish for serving. Do yourself a favor and buy the best you can afford.

Roasted Spaghetti Squash with Citrus Recipe
Ingredients
- 1 large spaghetti squash
- ¾ cup sliced or slivered almonds toasted
- 2-3 green onions sliced
- ¼ cup lime juice
- ¼ cup olive oil
- 1 garlic clove minced
- Salt and pepper to taste
Instructions
- Wash the outside of the squash and slice in half lengthwise.
- Remove the seeds from the center.
- Brush the flesh with olive oil and bake at 425F degrees for about 45-60 minutes, until tender.
- Let sit 5-10 minutes and then scrape the insides out.
- In a small bowl or cup, whisk the lime, olive oil, garlic, salt and pepper until emulsified. Pour the dressing over the spaghetti squash, toss in the almonds and onions, and mix to combine.
- Serve warm or cold.
