South Beach Diet Works
Don and I do the South Beach Diet every once in awhile because Don finds it to be an easy way to take off 10 or more pounds in two weeks. We seldom make it much past Phase One, but all the recipes we have tried on this diet are good. I don't have as much luck as Don with the weight loss; I generally lose 5-7 pounds. But what the heck? Five pounds ain't bad.
Eliminate Sugar
And the diet seems to reset my metabolism, while also getting rid of residual joint pain. I don't know if it's all the salads that we eat on the diet (sometimes two a day) or the fact that I'm not eating any sugar. Alas. I tend to think it is the latter. Eventually, we slip back into having desserts with sugar. I'm not sure why. It must be a brain thing. "Lois, even though that substitute sugar tastes just as good as real sugar, you know you want sugar. Eat some sugar!" And I bend. Gimme some sugar.
What You Need
Seriously, you need measuring cups and measuring spoons, a bowl and a wire whisk or spoon. But I use my mini food processor to make it nice and smooth and I have a micro-planer to zest the lime. Since it takes only a few minutes to make, you might as well have a wonderful cup of coffee or a cup of tea with your dessert. If you aren't actually on the diet, have a nice aperitif with your creamy dessert. What a combination. On Phase One, you can't have alcohol, but you can have this dessert anytime. You don't have to be on the diet.
I didn't think lime with ricotta cheese would be very good, but I was really surprised. It's yummy. Do give it a try.

South Beach Lime Ricotta Creme
Ingredients
- 1 cup part-skim ricotta cheese
- zest of one lime about ½ teaspoon
- ¼ cup lime juice
- ½ teaspoon vanilla extract
- 2 individual packages Sugar substitute Splenda, about two teaspoons
Instructions
- Mix all the ingredients until well blended. (I use my mini food processor.)
- Chill for at least ½ hour before serving.
