Summertime is terrific for grilling and we have an abundance of summer squash. Perfect! It's easy to grill squash and you can season them to your taste. I love Italian seasonings so that is my go-to.
My recipe calls for thyme, oregano, marjoram and salt and pepper. Sometimes I add orange zest to give it a little different flavor. Pair this dish with grilled chicken or pork and add a side salad for a delicious meal.
What You Need
You will need some heavy duty aluminum foil, a knife and a cutting board. And a grill, of course.
Grilled Squash With Onions And Herbs

Ingredients
- 3 tablespoons olive oil
- 1 small red onion (sliced)
- 1 zucchini (sliced in rounds)
- 1 yellow squash (sliced in rounds)
- 2 cloves garlic (minced)
- 1 tablespoon fresh thyme
- 1 tablespoon fresh oregano
- 1 teaspoon dried marjoram
- ¼ teaspoon orange zest (The zest is the outside peel.)
- Salt & Pepper to taste (I use about ¼ teaspoon salt and ⅛ teaspoon pepper.)
Instructions
- On a large piece heavy-duty aluminum foil, pour 2 tablespoons of olive oil.
- Place the onions, zucchini, yellow squash on top of the oiled aluminum foil.
- Sprinkle the minced garlic, spices, orange zest, and salt and pepper over the squash.
- Pour the final tablespoon of olive oil over the top and seal the package.
- Bake the vegetable package on the hot grill for about 30 minutes, turning once.
