    The South Beach Diet is a popular diet developed by cardiologist Arthur Agatston. The diet focuses on eating high-fiber, low-glycemic carbohydrates, lean proteins, and healthy fats.

    There are three phases to the diet. The first phase works on getting rid of those cravings for sugar and starches, the second phase is all about putting good carbs into your diet, and the third phase is the maintenance phase for long-term healthy eating.

    A lot of people love this diet and have successfully completed the program mainly because it focuses on whole foods and balanced nutrition.

    Spinach Stuffed Mushrooms

    I used small button mushrooms for this recipe. I would normally use large button mushrooms but I didn't have any. The large ones are perfect for two-bite appetizers.

    A phase 1 recipe that is light and refreshing. It screams Summer but eat it all year round.

    Tilapia Baked Or Grilled

    This tiliapia is so tasty and is so tender when cooked. Spice it up if you like it hot.

    For this dish I used canned asparagus and it was delicious. I don't like for the asparagus to be too crisp and it just gets warmed a bit in the omelet.

    Chicken wrapped in parchment paper with vegetables and steamed for moistness.

    I love a good slaw and the dressing makes this one.

    Lemon Ricotta Creme

    Ricotta is good for you and the addition of lemon to this light dessert makes it perfect.

    This Salmon recipe can also be used in an air fryer. I love our air fryer, it cooks so fast and the salmon is moist and flaky.

    This dish doesn't look diet, does it? All I can say is it is on the South Beach Diet and is the perfect breakfast dish.

    When you hear "cauliflower," you may want to tune out. But don't, this recipe is really good.
